One of South West Sydney’s much-loved restaurants will create tasty dishes with a twist for Liverpool’s new multicultural food festival, Liverpool on a Roll.

The chefs at Bellbird Dining & Bar, based at Casula Powerhouse Arts Centre, have drawn on their passion for showcasing locally-sourced, seasonal produce, much of it coming from their on-site garden, to develop a selection of dishes that will be presented “on a roll”.

“The Bellbird team is excited to be part of Liverpool on a Roll,” head chef Federico Rekowski said.

“Being challenged to deliver delicious food ‘in’ or ‘on’ a roll is an exciting food concept to play with and we are looking forward to sharing our creations with festival attendees.”

The Le Cordon Bleu-trained head chef and sous chef Steven Pham have drawn on their training and cultural backgrounds to develop four delicious bao:

Pork belly, with kimchi, kewpie mayonnaise and fried shallots;Soft shell crab, with Indonesian-inspired chilli sauce, cucumber and pickled fennel;Enoki and field mushroom, with green chimichurri and garden greens; andDeep-fried dessert bao, topped with chocolate mousse, toasted nuts and dulce de leche.

Liverpool Mayor Wendy Waller said Council is delighted to have Bellbird Dining & Bar on board for its new festival which will be held at Greenway Park on 30 March.

“The team at Bellbird Dining & Bar deliver world-class cuisine within the walls of Casula Powerhouse Arts Centre, Liverpool’s award-winning cultural institution,” Mayor Wendy Waller said.

“Inviting them to join us at Liverpool on a Roll was a natural fit and Council is thrilled that they’ll be selling tasty treats and fresh produce from their on-site garden for the community to enjoy.”

As Council’s newest major event, Liverpool on a Roll is set to dial up the focus on food, with visitors able to try a plethora of tasty treats presented “on a roll”, from classic dishes such as burgers, banh mi and burritos to high-concept desserts and fusion meals.

In addition to international cuisine, the food festival will feature live entertainment, giveaways, garden games and market stalls selling seasonal local produce.

Liverpool on a Roll will be held from 5pm – 10pm on Saturday 30 March at Greenway Park, West Hoxton. All food items will be capped at $12.

Council encourages restaurants, cafes and businesses to submit an Expression of Interest by 1 March should they wish to support Liverpool On A Roll as a stallholder or sponsor.
